Quick-Fix Beef Burrito Skillet

This one pan meal became an instant favorite, even Logan couldn’t get enough. Complements of Kraft Foods, I bring you Quick-Fix Burrito Skillet.

What you will need.

1 lb lean ground beef
1 package (1-1/4 oz) taco seasoning
1 can kidney beans, drained and rinsed
1 cup salsa
1 cup water
4 (6 inch) flour tortillas cut in 1-1/2 inch squares (I replaced flour with whole wheat tortillas)
1 cup Mexican style shredded cheese
1/3 cup sour cream
1/3 cup chopped green onions ( I skipped them)

Directions:

1) Brown meat in large non stick skillet on medium-high heat; drain
2) Add seasoning mix, beans, salsa and water; stir. Bring to a boil. Simmer on medium-low heat 5 minutes.
3) Stir in tortillas, top with cheese. Cover, let stand 5 minutes or until cheese is melted. Top with sour cream and onion.

This recipe makes about 4 1-1/2 cup servings, and will take about 35 minutes to make. At 600 calories and 25 grams of fat per serving it’s a little more than I like to eat and probably not for anyone trying to lose weight. The taste was well worth the calorie intake and it was quite filling.
