Tasty Tuesday…Not your Mama’s Meatloaf!

From the first time I made this for my family it has been a favorite. It’s fast, it’s easy, and it’s super YUMMY!

Complements of Busy Mom’s Weeknight Favorites, I give you Cheeseburger Meatloaf.
Prep time: 15 min. Cook time: 1 hour Makes 4 servings
You will need:
1 lb. lean ground beef
1 cup shredded cheddar cheese
3/4 cup uncooked regular oats
1/2 cup milk
2 Tbsp. minced onion
1 large egg
1 tsp. Worcestershire sauce (I usually use a little more)
1/2 tsp. salt
1/2 tsp. dried mustard
1/4 tsp. garlic powder
Ketchup
Step 1. Preheat oven to 350. Combine first 10 ingredients in a large bowl, stir until blended. Shape into a loaf and place in pan.
Step 2. Bake at 350 for 30 minutes. Coat top with ketchup and bake 30 more minutes or until no longer pink in center. Let stand 10 minutes and slice.
With this I use a 9″x13″ pan and put the loaf in the center and surround it with some of my “shimmy and roast potatoes”. For the potatoes, use one for each person, skin and slice into bite size pieces. Toss the pieces in a Ziploc bag with some extra virgin olive oil and McCormic’s Vegetable Supreme seasoning. Seal bag and shake until all the potatoes are coated, pour around meatloaf. They cook right with the meatloaf and should be tender and tasty when it’s done.
