Tasty Tuesday treat for Turkey Day!

Hello! When I first started to feel my way around the kitchen, this was one of the first things I tried out, and man am I glad I did. I found this a few years back in my Better Homes and Gardens Cookbook: Bridal Edition. My mother had gotten the book for me as a wedding present and I don’t think I even opened it until I had been married a couple years. Yeah, it took me a while to get over my fear of the kitchen, thank goodness for take out and a husband who can cook.

This tasty dessert is perfect for any holiday gathering and is always a hit. If you’re a novice in the kitchen, you’ll feel like a super star when you make your own frosting from scratch!
Pumpkin Bars:

What you will need:
2 cups flour
1 1/2 cups sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cloves
4 beaten eggs
1 15 ounce can of pumpkin
1 cup cooking oil
Cream cheese frosting (see below recipe)
Directions:
1) In a large bowl stir together the flour, sugar, baking powder, cinnamon, baking soda, salt and cloves. Stir in the eggs, pumpkin and oil until combined. Spread in an ungreased 9×13 inch bake pan.
2) Bake at 350 for 25 – 30 minutes or until a wooden tooth pick inserted near the center comes out clean. Cool for 2 hours, spread with cream cheese frosting. Cut into bars and serve.
Cream Cheese Frosting:
What you will need:
4 ounce cream cheese, softened
1/4 cup butter or margarine, softened
1 teaspoon vanilla
3 – 5 cups powdered sugar
Directions:
Beat cream cheese, butter and vanilla with electric mixer until light and fluffy. Gradually add powdered sugar, beating well. Add powdered sugar to reach spreading consistency.

Who knew homemade frosting could be so easy?!?
