Ok, after 5 years, I have re-entered the world of the working. Wait a second, that makes it sound like I’ve been sitting around doing nothing for the past 5 years, and that certainly isn’t true.

Let’s try this again…

After 5 years, I have re-entered the world of working outside the home. Not a big fan of that either, but it’ll have to do for now.

Since I’ll work mainly in the evenings, that leaves my boys to fend for themselves. To avoid having my children eating hot dogs and chicken fingers 5 nights a week I have to start being a little more creative with my meal planning. This means more slow cooked meals that I can prepare at lunch time so all Bill has to worry about throwing together a side or two.

Last night was my first attempt, and it seems to have worked well. When I asked Cameron what he thought of his meat, he said it was really good. Bill said it was good, but he probably should have taken it out sooner. I plan to try the leftovers for lunch today.

This took me about 5 minutes to toss into the slow cooker, so it’s great if you’re really pressed for time. I don’t have any cook times, so you’ll have to keep an eye on it so you can adjust the temperature as needed.

Coca Cola Roast Beef


What you will need:
2 lbs roast beef
1 tbsp salt
1 tbsp chili powder
1 tsp thyme leaves
1 tsp basil leaves
1 tsp oregano leaves
1 tsp paprika
1 tsp black pepper
1 tsp dried mustard
1 tbsp Worcestershire sauce
2 cups coca cola

Directions:
Place roast in slow cooker (fat side up). Blend seasonings together. Pour Worcestershire sauce over meat and rub with the seasonings. Pour Coke along side of the beef.

It doesn’t get much easier than that.
