What’s For Dinner???

I’ve grown so sick of the same old when it come to dinner. I stumbled across this recipe from Pillsbury and it has quickly become a family favorite.

Bow-Ties With Bacon and Tomatoes

What you will need:

4 Slices of bacon, cut into 1 inch pieces

1 Medium onion, finely chopped (1/2 cup)

1 Can (14.5 oz) diced tomatoes with roasted garlic and onion, undrianed

1 3/4 Cup chicken broth

3 Cups uncooked bow tie pasta

1/8 Teaspoon pepper

Directions:

1) In 12-inch skillet, cook bacon over medium-high heat 8 to 10 minutes, stirring frequently, until bacon is brown. Reduce heat to medium. Add onion; cook 2 to 3 minutes, stirring frequently, until onion is tender. Depending on the kind of bacon you use, you might have to drain the fat before you add the onion.

2) Stir in tomatoes, broth, uncooked pasta and pepper. Heat to boiling over high heat. Reduce heat to medium; cook uncovered 10 to 12 minutes, stirring occasionally, until pasta is tender and mixture is as thick as you like.

If you’re looking for a good meatless meal, this could very easily work without the bacon.

I really liked this dish and plan on making it more often. Logan liked it so much he gobbled everything on his plate with gusto and then asked for more. Bill seemed to enjoy it as well. The only one not interested was Cameron, but he doesn’t like anything so he just had a can of SpaghettiO’s. Paired with a side salad, this is a quick (about 35 minutes), easy meal that is sure to please.
