Tasty Tuesday…Cheap Tuna Tuesday!

Ok, since I didn’t have access to my computer all day yesterday, I thought I would give you a tasty dinner that’s easy on the wallet. I love this recipe because it’s tastes more expensive than it is and can be made in just 35 minutes. I’ll give you the recipe and at the bottom I’ll list my healthier substitutions.

Tuna and Tomato Pasta

You will need:

2 Tablespoons extra virgin olive oil (EVOO)
2 Cloves garlic, chopped
1 Cup chopped flat leaf parsley
1 8 oz can of crushed tomatoes
Salt and pepper
4 Tablespoons of butter
1 6 oz can of white tuna in olive oil, drained
1 1 pound box of medium pasta shells

Directions:

1) In a large saucepan, heat EVOO over medium heat. Add garlic and cook about 1 minute. Add 2 tablespoons of parsley and cook for 1 minute. Add the tomatoes and season with salt and pepper. Cook over low heat until sauce thickens, about 20 minutes. Whisk in butter, then stir in tuna.

2) Meanwhile, in a large pot of boiling water, cook pasta, drain. Add pasta to the tuna sauce and stir in 3/4 of the remaining parsley; season with salt and pepper. Top with remaining parsley.

Healthy Substitutions:

I use whole wheat pasta instead of white pasta and white tuna in water instead of oil. I also found that I didn’t need to add the salt and pepper at all. Since I never have fresh parsley, I use dried parsley flakes, and season to taste.
