Tasty Tuesday…Red Beans & Rice

I just made this last night and was reminded how fast, easy and yummy it is. I will say, it might be a little too spicy for some. It’s right on the edge of what I can handle, but Bill adds hot sauce to it. At less than $2 a serving, not only is this meal delicious, it’s cheap too.

Red Beans & Rice:

What you will need:
1 lb sausage, sliced
2 cups cooked brown rice
1 (14.5 oz) can diced tomatoes with chilies
2 (15.5 oz) cans red kidney beans, drained and rinsed
1 Tbsp. ground cumin

Directions:
1) In a large skillet, cook sausage over medium heat, stirring frequently until lightly browned (about 10 minutes). Transfer to a plate and cover with foil to keep warm.
2) Add rice, tomatoes, beans and cumin to skillet and stir to combine well. Cook over medium heat stirring until warmed through, about 5 minutes. Add sausage, stir and serve hot.

This recipe makes 4 servings and took me about 35 minutes including the prep time. The nutritional info per serving; 653 calories, 34g fat (11g sat. fat). I know it might seem a little high in calories, but the serving size is pretty large and served with a light salad it is a whole meal. To lighten it up a little, use turkey sausage instead of regular and you’ll cut down the fat content.
