I have a crush on Rachael Ray

I’m not ashamed to admit, that I love Rachael Ray! I love her spunky personality, her love of orange, and most importantly her yum-o meals. I try to catch her show on ABC as much as my children will allow. Every time I do tune it Rachael is cooking up some wonderful concoction that even a cooking newbie can handle. I have a few Rachael Ray cookbook that I use quite frequently, but my favorite is, Cooking Rocks! Rachael Ray 30-Minute Meals For Kids


Cooking Rocks! is full of fun, easy recipes that even a kid can make, which is just my speed. Not only are the recipes easy to make, but they’re kid approved. My boys love chicken nuggets and  the Crunchy Oven-Baked Chicken Toes are always a hit.

What you will need:
1 cup corn flakes cereal
1 cup plain bread crumbs
2 tablespoons brown sugar
1/2 teaspoon ground black pepper
1/2 teaspoon allspice (“secret” ingredient)
3 tablespoons vegetable oil
1/3 cup flour
2 eggs, beaten
1 1/2 pound chicken breast tenders, cut in 2 inch pieces
1/4 cup honey mustard
1/4 cup barbeque sauce

Directions:
Make the breading: pour the corn flakes into a pie pan or other large, shallow dish. Crunch the cereal up with your hands. Mix in bread crumbs, brown sugar, salt, pepper, and allspice.

Drizzle the oil evenly over the breading. Toss and turn it to mix the oil through that bread crumbs and crushed cereal.

Pour flour into another shallow dish, and beaten eggs into a third. Turn the chicken in the flour, then eggs, then cereal mix. Arrange chicken toes on a nonstick baking sheet. Place chicken toes in the oven at 375F and cook until crisp and brown all over, about 15 minutes.

While chicken is cooking, mix up the sauce. Mix honey mustard and barbeque sauce together in a small bowl. Dip your chicken toes in the sauce and enjoy!
