Tasty Tuesday…I love this time of year in the kitchen!

The winter months are my favorite for cooking. I love all the stews, chilies and casseroles that are just too much for the other times of year. Last night I tried yet another new recipe, and no I didn’t injure myself. This is great for when you just don’t have enough time to let the chili simmer all day, but you want a satisfying winter chili.

White Bean Turkey Chili:

What you will need:
Cooking spray
1 package lean ground turkey
1 cup chopped onion
1 cup green bell pepper, chopped
14 oz can diced tomatoes, undrained
2 15 oz cans great northern beans, drained and rinsed
2 11.5 oz cans tomato vegetable juice (V8)
1 tablespoon chili powder
1/2 teaspoon ground cumin

Directions:
1) Spray large sauce pan with cooking spray. Add ground turkey, onion, and green pepper. Cook and stir over medium heat, about 8 minutes, or until turkey is crumbled and no longer pink.

2) Stir in undrained tomatoes, beans, vegetable juice, chili powder and cumin. Bring to boil, stirring occasionally. Reduce heat to low, cover. Simmer 15 minutes, stirring occasionally.

Last night I let it simmer for about 30 minutes instead and it was wonderful. My only complaint about this chili is that it was a little more watery than I like my chili, but the taste was great! I served my chili with some shredded cheese, sour cream, and warmed flour tortillas. White bean turkey chili was enjoyed by all, especially Logan who couldn’t get enough. I’m looking forward to some leftovers for lunch.
