Tasty Tuesday…Stay warm.

Even though the calendar says that spring is right around the corner, it certainly doesn’t feel like it out there. Another yucky day here in PA, and on days like today comfort food is just perfect. 

Today’s yummy and delicious meal is brought to you from my husband Bill. If I remember correctly, it was one of the first things he cooked for me when we first started dating. Oh, and don’t for a second think he came up with it all on his own. I’m pretty sure the wife of a friend probably gave it to him.

Tortellini Soup:

What you will need:
1 pound sweet Italian sausage, casings off
1 Cup chopped onion
1 Carrot, sliced
2 Large garlic gloves
1 Green pepper, diced
48 Ounces chicken broth
2 Cup petite diced tomatoes
1 Large zucchini, sliced
1 8 Ounce can tomato sauce
1 Tablespoon basil
1 Tablespoon oregano
12-16 Ounces fresh cheese tortellini

Directions:
Saute sausage until cooked, crumble, put in large bowl. Save 1 tablespoon of drippings to saute onions and garlic, saute about 5 minutes. Put cooked sausage, sautéed onions and garlic, and the rest of the ingredients (except tortellini) in a large stock pot. Let simmer. About 7-10 minutes before serving, add tortellini. Serve with parmesan cheese.

This soup is a delicious and filling meal for any chilly night.
