When easy is in the name, it must be EASY!

Happy Tasty Tuesday. You might have noticed we’ve been trying a lot of new recipes lately. We’ve also bee finding a lot of new recipes we REALLY like, and today’s Tasty Tuesday recipe is no exception. This one was so good I devoured the leftovers for lunch the next day, and I’m not a leftovers kind of girl.

Easy Stromboli:


What you will need:
1 onion chopped
2 tablespoons olive oil
dash or two of Italian seasoning
2 tubes of Pillsbury pizza dough
6 ounces Italian flavored diced tomatoes
4-6 tablespoons pizza sauce, or your favorite marinara sauce
2 teaspoons garlic powder
1/2-1 cup fresh grated Parmesan cheese
1 (8oz) bag of shredded Italian-blend cheese
1 (8oz) package of sliced mushrooms (optional)
1-1 1/2 pounds ground sausage (optional)
1 1/2 ounce sliced pepperoni (optional)

Directions:
1) Preheat oven to 375F.
2) In a skillet, cook the onions and mushrooms in the olive oil over medium heat, stirring, until soft, about 5 minutes.
3) In another large skillet, brown sausage. While cooking the sausage, add the garlic powder and a couple shakes of Italian seasoning. Drain sausage and combine it with onions and mushrooms.
4) Roll out the pizza doughs onto a greased cookie sheet. Place the sausage mixture on one side of each piece of the dough. Layer the mixture with a few pepperoni slices. Add 2 to 3 spoonfuls of chopped tomatoes and top off with shredded cheese.
5) Fold the other half of the dough over to cover your filling, and press the seams together. (Be careful not to overfill) Sprinkle Italian seasoning onto the dough.
6) Bake for 15 to 20 minutes. Don’t overcook the dough, it should be just browning when you remove from the oven. While the dough is baking, warm up the pizza sauce or marinara.
7) When ready to serve, slice the stromboli lengthwise and place a spoonful of sauce over top of each serving. Top with Parmesan cheese.

The beauty of this recipe is that you can customize it any way you want. I don’t like mushrooms, so we left them out. We added some chopped green pepper, and ricotta cheese to ours. You can make a different stromboli each time you make it or you can fill one dough with one kind of filling and the other with something totally different. Make a veggie stromboli with all your favorite (seasonal) veggies. If you’re a carnivore like me, add as many kinds of meat as you can fit. The possibilities are endless.
