A Week In Mommyland (Week 31)

Hey, better late than never, right?

Monday.

Since I had to work on Bill’s birthday I took him out to breakfast after we dropped the kids off at camp. We took a stroll through downtown Kennett before we hit our new favorite breakfast spot, Sunrise Cafe.

I had the most amazing gingerbread pancakes. They were so good there wasn’t a crumb left on the plate when I was finished. The tea selection there is pretty good too. I always drink green tea with breakfast and they had a fabulous raspberry green tea that I couldn’t get enough of.

Tuesday.

I get a text while I was at work that the boys made me something. I’m thinking a cute picture or some other crafty thing. I get home (after 8pm) to these babies. Chocolate chip cupcakes. OK, they were actually chocolate chip muffins that they put frosting on. I guess no one has been paying attention to how hard I’ve been working to eat better and drop a few pounds.

How could I say no to these babies? Although I must be getting better because I only ate one. I also threw the half tub of icing that was leftover in the trash.

Wednesday.

Early morning runs have become a habit around here. It’s a little easier for me to get going in the morning when I have everything ready to go the night before.

Thursday.

Bill comes to Costco with me to keep me from buying an $80 desk chair and what do we come home with? A $500 blender. OK in all fairness it’s a lot more than a blender but still.

We’ve used it every single day since we’ve gotten it and I have to say it’s worth every red cent we paid for it. We’ve made (HOT) soup, (cold) ice cream, countless smoothies, muffins, doctored up protein shakes and I even used it to prep some of the ingredients for my granola. It’s the most versatile thing I’ve got in my kitchen.

Friday.

Ah, another one of those rare moments when I get to snuggle with one of my boys (and Snuggle Puppy).

Saturday.

What do you do when your Saturday plans fall through? Go drop a couple hundred dollars at Dutch Wonderland!

Seriously though, the boys had a great time and so did I. We spent most of the day there eating junk food and riding the rides. And of course, it’s not a fun trip to the amusement park if one of your kids doesn’t puke. I take it as a good sign that I feed them well most of the time so when they get junk their systems can’t handle it.

Sunday.

After all the junk on Saturday I decided to make some healthy blueberry muffins on Sunday.

Since the kids can’t bring PB&J’s to camp these make for a good lunch alternative.

The recipe is actually a Vitamix recipe and I got to use the Vitamix to make the muffins. We are hell bent and determined to get our money out of that bad boy!

That my friends is my week in a nutshell.
