Totally Nutty Smoothie Recipe

Since buying my Vitmaix nearly two years ago, I have become a major fan of the smoothie. I started out following the recipes that came with the Vitamix but eventually I started to just toss things in and see what I got.

Today I wanted to share one of my favorite creations with you, I give you the Totally Nutty Smoothie!

Nutty Smoothie

What you will need:

1 cup almond or cashew milk

1 TBSP chia seeds

2 TBSP powdered peanut butter

1/2 banana

60 grams spinach

10 grams raw almonds

How you do it:

Put everything in your Vitamix (or Nutrabullet or blender) Be sure to put the chia seeds, almonds, and peanut butter in before the banana and spinach, that’ll keep it from flying around inside the container. Send everything for a spin until it’s smooth and creamy.

That’s all there is to it.

Other tidbits:

Your smoothie will be green but it will not taste green, I promise. Adding the spinach (or kale) will help boost it’s nutritional value big time. It’s plenty sweet for me but if you like things on the sweeter side, add some honey or agave nectar to sweeten things up a bit. About half a tablespoon should do it.

This smoothie, made with cashew milk, comes it at 273 calories, 14 grams of fat, 10 grams of fiber, 330 grams of sodium, and 11 grams of protein. I like to make this one to take as a meal while I’m at work.

Five Star Meatloaf

I know there are some people out there who hate meatloaf but I am not one of them. In fact I could eat meatloaf weekly, especially if we’re making this meatloaf.

This recipe originally came from a Southern Living cookbook but over the years I’ve bent it and tweeted it and made it something completely new. When I started to use the Five Star ground beef it became something even better than I could have imagined.

Five Star Meatloaf

Mommyland Meatloaf

What you will need:

1 pound of Five Star Home Foods Ground Beef
1 egg
1/2 cup milk
3/4 cups oatmeal (we like to use the old fashioned oates)
1 carrot, grated 
2 TBSP minced, dry onion
2 TSP Worcestershire sauce 
1 TSP dry mustard
1 TSP fresh, minced garlic
       OR
1/4 TSP garlic powder
 

Directions:

1) Mix all ingredients in a mixing bowl
2) Line baking dish with foil for easy cleanup
3) Form in loaf shape in baking dish
4) Bake in 350 degree, preheated oven for 45 minutes
5) Serve and enjoy.
 

I love this recipe because it’s quick, easy and tastes great. I usually serve this with meatloaf with roasted sweet potatoes and a green veggie. The kids often complain when I make meatloaf but somehow there are never any leftovers, so clearly they like it.
