Have some chicken tonight…

It doesn’t take too long for me to get tired of chicken, it gets so boring so fast. I found a new recipe to spice up that boring chicken for something a little different. It’s what’s for dinner tonight in the Brown house.

Salsa Chicken:


What you will need:
1/2 oz taco seasoning mix (half a 1 oz packet)
4 boneless, skinless chicken breast halves (about 1 lb.)
1 cup salsa
1 cup shredded cheddar cheese (or Mexican blend for something different)
2 Tbsp. sour cream (optional)

Directions:
1) Preheat oven to 375F. Mist a 9×13 inch baking dish with cooking spray. Place taco seasoning and chicken in a ziploc bag and shake to coat, then place chicken in baking dish. Pour salsa over top.

2) Cover with foil and bake for 20 minutes, or until chicken is tender and cooked through.

3) Remove foil, sprinkle chicken with cheese and continue baking until cheese is melted, another 3-5 minutes. Top with sour cream, if desired, serve hot.

Serve with a side of beans, rice and corn bread. Total time for this recipe is about 30 minutes. It’s a great midweek meal that uses a lot of things you probably already have around the house.
